Smoking food for beginners

News Progress Posted on July 17, 2024 by webmasterJuly 17, 2024

•July 17, 2024•

There’s no shortage of ways to impart flavor to foods when cooking at home. Smoking food is one method that has grown increasingly popular in recent years.

Smoking imparts unique flavor to a wide variety of foods. Like other approaches to cooking, smoking involves a learning curve that may include some trial and error. Grilling enthusiasts who want to try their hand at smoking food can keep these tips in mind.

• Remember the mantra “low and slow.” Low and slow is the preferred method among cooks experienced in smoking. The method involves cooking foods at low temperatures for long periods of time. When smoking, unlike with traditional grilling, cooks want to ensure the food is not directly over a flame. Smoking stones can be used to absorb and deflect heat, and similar products can accomplish the same. That absorption and deflection allows foods to cook slowly, which in turns helps impart the smoky flavor people love. Read More

I do a lot of brain health programming and will almost always mention that physical exercise is very beneficial for your brain. I saw this article written by Albert Bang who was a Physical Activity Promotion intern with the Integrated Health Disparities program during Spring 2024 and wanted to share with you. Albert says: You know exercise is good for your heart, lungs, muscles, and bones, but recently experts are finding increasing evidence showing that exercise is good for your brain too – including reducing the risk of Alzheimer’s disease.  Whether choosing what to eat, discussing a book with a friend, or remembering where you left the car keys, the brain plays a vital role in your daily life. Alzheimer’s disease is the most common type of dementia. For those with Alzheimer’s, chemical changes occur in the brain leading to a buildup of plaques and decreased functioning of neurons. As Alzheimer’s progresses, the brain shrinks in size accompanied by a decline in cognitive function so severe it begins to affect an individual’s ability to perform daily tasks. Alzheimer’s affects an individual’s memory, thinking, and behavior. Symptoms tend to appear after age 60, although early-onset Alzheimer’s can occur in younger adults. Although the exact causes of Alzheimer’s are not fully understood, a combination of genetic, lifestyle, and environmental factors are involved. This means that while you might have a genetic predisposition to develop Alzheimer’s, there are actions you can take to reduce your risk.  Read More

Not so dry 4th of July

News Progress Posted on July 17, 2024 by webmasterJuly 17, 2024

•July 17, 2024•

Illinois is known for its strange weather and even stranger summer weather patterns, leaving us residents at its mercy. The 4th of July though a wildly appreciated and celebrated holiday is nothing compared to the energy and love centered in Moultrie County’s celebration. Starting with a parade in the morning and leading up to the spectacular firework show that draws visitors from miles and miles to get a glimpse of that central Illinois hospitality. Like most years, the holiday was at the mercy of the weather, leaving many worried for late night fireworks shows or even during the daytime activities. Read More

Lincoln’s Log

•July 17, 2024•

by Janet Roney

“Can’t be!” “I don’t believe it!” “Never heard of it!”

That was the reaction of my brothers when I told them that French fur traders had used a trail through our neighborhood during the 1700s long before any pioneer settlers arrived in Moultrie. I wanted to prove to them that I was right. (Is there some sort of Little Sister with Three Older Brothers Syndrome? If so, I was afflicted with it for a time.)

There is absolutely no mention of the French Kaskaskia-Detroit Road in any published local histories. W. I. Martin, our neighbor who was born in 1869, and was the oldest man we knew when we were kids, never mentioned it during our visits. As I said before, our grandmother Shuman, who was born in 1880, and grew up right next to the trail, said nothing about it.   Read More
